Pumpkin Spiced Cereal

Recipe #1 in my November Pumpkin Series.

1/2 cup whole grain cereal, uncooked
1/2 cup evaporated skimmed milk
3/4 cup water
1 cup canned (or fresh pureed) pumpkin
1/2 teaspoon cinnamon
1/2 teaspoon allspice
1/4 teaspoon coriander
2 tablespoons black raisins
1 to 2 tablespoons honey

Cook all ingredients in a non-stick saucepan over medium heat. Stir occasionally for approximately 10 minutes, or until mixture thickens and cereal is ready to serve. Serves 2.
